GF and EF Huckleberry pie recipe

I thought I would offer you the recipe the girls used for the Huckleberry Pies they made.

pies3m Start with enough huckleberries (and blueberries if you would like) to fill a 9″ pie pan.¬†Rinse and dry them.

Toss them in a bowl with about 1/4 cup of sugar and 2 tbsp of corn starch. Place aside.

To make the crust, they used 2 sticks of butter and mixed them with about 2 cups of GF flour and a touch of the milk of your choice (they used rice milk).

Then separate the dough into two balls. One for the bottom crust and one for the top. If you have any extra, give to your little sister/child/person to make a small one.

Roll each on a lightly floured surface.

Assemble as you would any other pie. Bottom crust goes in pan, then put in the filling, and top with the top crust.

piem The small one doesn’t have a top, so it is more of a tart…and just as delicious!

Bake at 350 for 30 minutes (or until done).

    • Please let me know how it turns out! These were very general and simple directions. If you need a little more of this, or that, it is pretty forgiving. I love pie!
