We had a few zucchinis in the fridge, left over from the party, so I knew what had to be done.
Here is my recipe.
1 1/2 cups freshly shredded zucchini
1/2 cup veg oil
1 cup sugar
2 eggs (or I used 2 portions of egg replacer)
2 tsp. vanilla
1/2 tsp baking soda
1/2 tsp. cinnamon
1/2 tsp salt
1/4 tsp baking powder
1 1/2 cups GF all purpose flour mix
mini GF/Dairy free chocolate chips
*Preheat the oven to 350F
Shred zucchini in food processor and set aside.
In mixer, beat egg replacer, sugar, oil, and vanilla. Add baking soda, cinnamon, salt, and baking powder. Slowly pour in flour.
By hand, mix in zucchini and mini choc. chips.
Pour in greased and floured (GF, of course) loaf pan and bake for 75 minutes.
