Every year I make a series of yummy treats for those people that I just don’t know what to get for the Holidays.
The very first one I made this year was everyone’s favorite:
I thought it would be nice to share my recipe with you!
1 lb. white chocolate chips
12 oz. choc chips (I used Enjoy Life gluten and dairy-free chips)
1/2 tsp peppermint extract
Crushed candy canes (I used 2 large Hammond’s all natural mint candy canes)
I wanted to keep this as free from chemicals as I possibly could (as well as gluten). This recipe would work with whatever brands you like, though, as well.
OK, first line a 9×13 pan with foil and spray with canola oil.
Then melt your chocolate chips using your method of choice. I used a double boiler.
Pour melted chocolate onto the foil and spread evenly.
Put into the freezer for 2-4 minutes, or until it sets a bit.
While that is in the freezer, melt the white chocolate using your method of choice again. I used a microwave this time. Stir in peppermint extract, and pour over the top of the chocolate in the pan (once out of the freezer). Sprinkle crushed candy canes on top and press lightly.
Refrigerate to set.
For the lollipops, using a squeeze bottle, I made circles of chocolate on another piece of sprayed foil. I place the lollipop sticks on the circle, then squeezed more chocolate on top (I was going to use white chocolate to top, but ran out). Sprinkle crushed candy canes and pop into the refrigerator to chill.
